Misono Santoku Knife
Founded in 1935, Misono has remained a small, family-owned company for decades. The company originally produced sharp kitchen tools such as vegetable peelers and began making knives in the late 1960s. Today, Misono is recognized as one of Japan’s oldest makers of Western-style handled knives. With only 50 skilled craftsmen, Misono produces approximately 150,000 knives per year. Each component is manufactured in-house, ensuring exceptional quality and strict inspection standards.

The blades are made of High 16 Chromium and Molybdenum Stainless Steel (HRC 58–59), which provides superior durability, corrosion resistance, and ease of sharpening compared to standard molybdenum stainless steel.
Each knife features a full tang construction, a durable black Pakka wood handle (a composite of wood and resin) for water resistance, and a stainless steel bolster for added durability and balance.
