This Gyuto is hand-forged from Aogami #2 steel, cladded with carbon steel, and heat-treated to 61–62 HRC. Every step—including grinding and sharpening—is meticulously executed by the young artisan Mr. Yoshihiro Yauji, ensuring exceptional precision and craftsmanship.
The blade features an elegant Damascus Kyomen (mirror) finish and a Kasumi polish, with a choil so finely polished it is mirror reflective. Mounted on a premium walnut handle with black buffalo horn kuchiwa, this knife delivers smooth cutting performance, excellent balance, and striking aesthetics.
