SAPI STEER; disebut juga sapi jantan muda yang dikebiri berusia 2-3 tahun, dipelihara terutama untuk mendapatkan daging sapi berkualitas dengan warna daging lebih terang & menjamin kelembutan.
AGED; artinya di-tua-kan / di-empuk-kan, daging sapi yang disengaja didiamkan dalam chiller selama jangka waktu tertentu pada suhu -1 hingga 2 derajat Celsius. Daging sapi yang AGED akan meningkatkan kelembutan dan citarasanya, sehingga menghasilkan rasa yang lebih kuat.
