Milan is not only the fashion capital. It is the symbol of Bonifanti Panettone conceived in its original receipt, with raisins and candied orange and cedar peels, in its flat version that concentrates and exalts the flavours and scents of the mix. Bonifanti produces high quality pastry specialties since 1932: three generations dedicated to the excellence of Panettone, Colombe, cakes. Each Bonifanti product comes from a unique and irreplaceable ingredient: white mother’s natural yeast, which is crucial to have more scent, more taste, more lightness in the masterpieces of sweetness. Bonifanti is a seasonal company. In other words, our production is concentrated from September to Easter, but our sourdough requires continual attention and work every single day of the year, even several times a day. Of course, the type of work difers according to the time of year. The sourdough is alive and Ivano, our light-hearted master yeast expert, equates it to a new-born baby who must be constantly looked after. From simple maintenance operations in summer, when its main task is to rest, to the key preparation during production when it meets all the other ingredients during the second proving phase, before being baked. Another example of our respect for the timing dictated by nature is found in the cooling process, that in Bonifanti is all natural. We simply and patiently wait for the Panettone to cool without any forced heat extraction operation. When they leave the oven, our Panettoni enter in a cooling cell where they are gradually aligned in neat rows, upside down to promote a uniform distribution of the aromas released by its ingredients and cool naturally, over time as needed. The delicate biological balance of the sourdough must be accompanied by high-quality ingredients mixed into the dough. There must be no contamination from preservatives or additives. The only preservative, absolutely natural, is lemon juice, used for the fruit that, before being candied in the Bonifanti
