Wet Hulled Coffee Processing (Also known as "Giling Basah" in Indonesian) is a unique coffee processing method commonly used in Indonesia, especialy in Sumatra. This method differs from washed (fully washed) or natural (dry) processing and result in a distinc flavor profile. After picking, the coffee beans are left wrapped in the skin of the fruit.
During the infusion process, the coffee beans are soaked with fruit juice (eg grapes) in water to absorb the flavor and natural components of the coffee fruit skin. This process provides a richer, deeper flavor as the coffee beans are "Integrated" with the fruit or floral character.
