For this specific coffee, the natural drying phase takes up to 20 days. The coffees are moved frequently and covered during the hottest hours of the day to protect the cherries from intense sunlight, then covered again at night to protect against humidity to improve the flavour development of the coffee. This is an elegant cup that has the sweetness and juiciness of Rambutan, followed by Rose Tea aromatics, and a finish of delicate Rose Apple acidity.
