When we finish picking at the end of the day, the cherries (only red Ferrari color) are washed in tanks and their floats removed, then placed at a clean table to select cherries by hand in our process facilities.
The water we use at Mil Cumbres comes from an artisan spring located at 2,000 meters within the Volcán Barú National Park boundaries. Is a pure, completely natural, clean and crisp water.
Then slowed dried for the next 30-40 days in the African beds (thickness of inch and a half at the most per square), the temperature of the location is 26C the highest and the lowest at night is 12.5, averages 17 degrees. Humidity it is controlled via solar panels, since we don’t have electrical power, we can say we are green!
