Anaerobic Honey
In this process, the coffee is fermented in a sealed, oxygen-free environment, allowing for a slow and controlled transformation of flavor. Depulped and dried with its mucilage intact, this coffee offers a rounder body with ripe expressive notes, showing how careful timing and condition can elevate sweetness and nuance.
