In the heart of Yirgacheffe, where coffee thrives in its most untamed form, Koke stands apart as a place where nature dictates the rhythm of cultivation. Unlike conventional farms with neatly pruned rows, Koke’s coffee trees grow wild, their slender trunks twisting toward the sky, sprouting wherever the land allows. These naturally occurring heirloom varieties, shaped by the dense forest canopy and rich, red soil, give rise to some of the most expressive coffees in Ethiopia.
Here, the cherries are carefully hand-harvested from October to January before making their way to the washing station, where small-holder lots are combined and meticulously sorted. Only cherries measuring between 18-22º Brix are selected, ensuring optimal sweetness and complexity. The natural process unfolds over 30 days, with cherries slowly drying on raised beds under the sun, constantly raked to maintain even drying and clarity of flavor. This extended drying period allows the beans to absorb the rich, fruit-forward characteristics of the cherry, developing a depth and vibrancy that define Koke’s unique profile.
The result is a coffee that embodies the wild beauty of its origin. Juicy malic acidity like strawberry and red stone fruit take center stage, balanced by grape sweetness and floral finish like a rose petal.
