From the slopes of Mount Ijen in East Java comes the 2024 Cup of Excellence winner, Ijen Lestari. Founded by Mas Dandy in 2016, the employ a unique carbonic maceration process. Only the ripest cherries are selected for fermentation with carbon dioxide in sealed tanks, followed by pulping and drying with the mucilage intact to a precise 11-12% moisture level. This meticulous process unlocks a complex flavor profile, revealing notes of pink grapfruit ,rosewater, and sugar cane finish.
