Finca Soledad is a coffee farm in Ecuador, located high in the Intag Valley at 1,515 meters above sea level. It’s run by Pepe Jijón, who used to be a mountain climber. Now, he puts that same passion into growing coffee. One of his coffees, Typica Mejorado, became well known in 2023 when Dawn Chan used it to reach the Top 4 at the World Barista Championship. It also often ranks among the best in Ecuador’s national coffee competitions, showing just how special it is.
Pepe uses an innovative processing method called the Wave Natural Process. It involves carefully controlling the temperature during fermentation in tanks, starting high and gradually lowering it, often with the help of refrigeration. This “temperature wave” is designed to keep the coffee embryo healthy, which helps preserve the coffee’s unique characteristics and special flavors.
It’s the mix of Finca Soledad, Pepe Jijón’s passion, their standout Typica Mejorado, and the smart Wave process that makes this coffee so special. With every sip, you’ll catch notes of juicy red grapes, soft rose, and a hint of violet. It’s the kind of coffee that makes you slow down and savor the moment."
