Skilled farmers carefully hand-sort the coffee cherries before a 108-hour barrel fermentation period. Drying is a multi-step process: first under the sun for 3 days, then transferred to a greenhouse to achieve a consistent moisture content of 11% and develop a more vibrant flavor profile.
